Egg Bhurji

Egg bhurji is one of best recipes with egg. In India, one of the famous street food is bhurji paav. So here, I am going to recreate the same bhurji with addition of veggies to make it more nutritious. You can add any veggies of your choice. We love spinach, broccoli and/or peppers. Trust me, its the simplest and delicious bhurji you’ll ever try. It goes well with paav(bread), roti and equally good with plain rice.

Step by Step Instructions for Egg Bhurji Recipe

  • Heat oil in a pan on medium flame. once hot add slit green chillies and let them cook for 10 seconds. You can skip the chili to avoid its spice.
  • Add roughly chopped onions, and sauté until its translucent or for 10-15 seconds
  • Add turmeric powder and red chili powder according to spiciness you want. Optionally Coriander and cumin powder can be added at this stage. We like it without these powder, so skipped.
  • Add tomatoes. Tomatoes can be pureed and added here. We like tomato chunks, so added chopped tomatoes. Mix everything together well.
  • Add washed spinach leaves. Here I have used baby spinach so added as it is. If leaves are big, you can chop them roughly before adding.
  • Turn the flame to high. Take care it doesn’t burn at the bottom. Sauté it for couple of minutes and cook it till moisture is completely gone. This is very important step.
  • Once all the moisture dried out, turn the flame to medium, crack and add eggs
  • Mix everything together
  • Keep sautéing frequently if you want smaller chunks of eggs
  • Now add salt as per taste, and cook for 2-3 minutes, and turn off the stove
  • Garnish with coriander leaves, and Street style Egg bhurji is ready.

  • 6 Eggs

  • 3 cups spinach leaves
  • 1 tbsp oil

  • 1 tsp coriander powder optional
